What did Jesus mean when He said a spirit does not have flesh and bones as you see me have?

Jesus was proving His resurrection was bodily and real, not merely a spirit. By inviting the disciples to handle Him and by eating broiled fish and honeycomb, He showed He had actual flesh and bones—a visible, tangible resurrected body with physical attributes, even able to eat.

Les explains that Jesus asked for food, and they gave Him a piece of broiled fish and honeycomb, and He ate it in full view of the ten disciples. That proved He was a visible resurrected Person with all the physical attributes, even being able to eat. Then in verse 39 He pointed to His hands and feet and invited them to handle Him and see, because a spirit does not have flesh and bones as He had. His resurrection body was real and tangible.

Luke 24:39

Behold my hands and my feet, that it is I myself: handle me, and see; for a spirit hath not flesh and bones, as ye see me have.
