How could Jesus be the innocent Lamb of God and still have all the guilt of the sinful world laid on him?

He was not personally guilty of their act, yet He became the innocent Lamb of God, upon whom all the guilt of a sinful world was laid. Though hanged on a tree in a despicable death, as Isaiah 52 says, He was more marred than anyone who ever lived.

Les explains that Peter’s statement about whom you slew and hanged on a tree shows the despicableness of His death. Peter is careful to say that Jesus Himself was not guilty of any of that. Instead, He became the innocent Lamb of God, and all the guilt of a sinful world was laid on Him. Les also references Isaiah 52, noting that of anyone who ever lived, Jesus was more marred and more or less human appearing as He hung on the cross than anyone who had ever lived.
