Who was the rock Jesus was talking about in 'Upon this rock I will build my church'?

The rock Jesus spoke of was Christ Himself, not Peter. When Jesus said, “Thou art Peter, upon this rock I will build my church,” the rock was Christ. He is the rock, the stone, the rock of our salvation, and the chief cornerstone.

Les teaches that the rock in “Upon this rock I will build my church” was Christ, not Peter. He is constantly reminded that Christ is the rock and the stone. When Jesus said to Peter, “Thou art Peter, upon this rock I will build my church,” the rock was Christ, the rock of our salvation. Les then points to Peter’s Old Testament analogy: Christ was to be the chief cornerstone and the head of the corner. Les shares a legend, not Scripture, about the building of Solomon’s temple: stones were pre-cut at the quarry so no hammer or chisel was heard at the site. The chief cornerstone was brought early, unrecognized, and dumped in a vacant lot where weeds grew. In arch architecture, the top stone holds everything together; that is what Christ was to have been, yet the builders dumped that very stone. People walking through the lot would bump into it in ignorance.

Matthew 16:18

And I say also unto thee, That thou art Peter, and upon this rock I will build my church; and the gates of hell shall not prevail against it.

Who is the rock in Matthew 16:18, Peter or Christ?

In Matthew 16:18 'upon this rock' is a symbolic use of the term, and the rock on which Christ will build His church is not Peter but Christ Himself, the only rock of Scripture.
