What caused the children of Israel to bow their heads and worship?

The children of Israel bowed their heads and worshiped because they heard that the Lord had visited them and had looked upon their affliction. They believed after seeing the signs God gave through Moses and Aaron, recognizing that God was about to act on their behalf.

Les explains that the people believed because they saw the signs, and they heard that the Lord had visited the children of Israel and had looked upon their affliction. That hearing and believing led them to bow their heads and worship. After Moses and Aaron approached the children of Israel and gave them the signs, they were supposedly convinced that God was about to do something. Moses and Aaron then went in to Pharaoh to demand Israel's release, but Pharaoh asked, "Who is the Lord?" or Jehovah, because Egypt had many gods and Jehovah meant nothing to him.
