Why were believers free to eat whatever they wanted after the Jerusalem Council?

After the Jerusalem Council, believers were free to eat whatever they wanted because they had been saved by the Gospel of Grace. They were not under any law of dietary form whatsoever, so dietary restrictions no longer governed their eating.

Les explains that this freedom came after the Jerusalem Council. These believers had been saved by the Gospel of Grace, and therefore they were free to eat whatever they wanted. They were not under any law of dietary form whatsoever. The context then moves to Peter's visit to the Antioch Church, where Paul withstood him to the face publicly because Peter was to be blamed and was at fault. Les notes that Peter stumbled, was just as human as all of us, and Paul called him on it.
