What is the second major theme Paul constantly stresses in his letters?

The second major theme Paul constantly stresses is that believers are not under Law but under Grace. Alongside defending his apostleship, this truth is preeminent in his writings, not only to the Corinthians but through the other letters as well.

Les teaches that in 2 Corinthians Paul has two basic points he has been trying to make. The first is that he must defend his apostleship, proving he has apostolic authority even though he did not walk with Christ up and down the roads of Palestine. The second thing constantly on his mind is that we are not under Law but under Grace. Les explains that these things are preeminent in Paul's writings, not only to the Corinthians but also in the other letters. Paul was brought through suffering and turmoil so Gentiles can have the tremendous Gospel of the Grace of God.
