Why does Paul not mention the Corinthians gifts again in Ephesians?

Those earlier gifts are left in the background because Ephesians presents greater gifts for the present epistles and the Body of Christ. Paul does not return to elementary experiences, just as one does not reopen third- or fourth-grade arithmetic once engaged in higher mathematics.

Les explains that the gifts present in Corinthians are not repeated in Ephesians, and he asks listeners to draw the logical conclusion. The reason is that those things are now left in the background, like a third- or fourth-grade arithmetic book that is no longer used in higher mathematics. Instead, Paul moves on to the greater gifts he brings out in Ephesians and his other present epistles. The context also notes that although the Body of Christ is brought to its fullest in the present epistles, Paul already introduces it, describing every true believer as a member of that Body, a concept Jesus never mentioned.
